Chocolate Cupcake

I made these cupcakes for my daughter’s halaqa party. These chocolate cupcakes paired well with vanilla icing and was a hit at the party. Here is the recipe-

Ingredients-

3 ounces chocolate chips

1/3 cup cocoa powder

3/4 cup hot coffee ( 1 table-spoon instant coffee mixed in 3/4 cup hot water)

3/4 cup  all-purpose flour

3/4 cup granulated sugar

1/2 teaspoon baking soda

6 tablespoons vegetable oil

2 large eggs

2 teaspoons white vinegar

1/2 teaspoon vanilla extract

A pinch of salt

Instructions-

Heat oven to 350° F. Put cupcake liners in a 12-cup muffin tin.

Combine chocolate chips, hot coffee and cocoa until the chocolate is melted. Cool in the fridge.

Mix flour, sugar, salt and baking soda.

Combine the eggs, oil, vinegar and vanilla and stir into the cooled chocolate mixture.

Add the flour mixture to the chocolate mixture and mix until smooth.

Pour the batter into the cupcake liners and bake for 17-20 minutes or until a paring knife inserted into the center of a cupcake comes out clean.

Cool completely before frosting.

Vanilla frosting recipe

Butter- 2 sticks

Icing sugar- 6 cups

Water- 3 Table spoons

Mix everything on high until peaks form. Add additional water if you want to spread the icing on the cupcakaes.
